Chicken Pozole

You will need

2 chicken breasts

3 cups of water

1 tablespoon olive oil

½ onion, thinly sliced

¼ teaspoon kosher salt

¼ teaspoon black pepper

4 cups of low-sodium chicken broth

1 teaspoon dried oregano

1 teaspoon crushed red pepper

One 15-ounce can of hominy, drained and rinsed

1 lime, cut into wedges

What to do
  1. In a large saucepan over high heat, combine the chicken and water and bring to a boil for approximately 15 minutes or until chicken is tender.
  2. When cool, shred the chicken and set aside.
  3. In a large saucepan over medium heat, heat the oil.
  4. Add the onion, salt and pepper and cook, stirring occasionally, until soft and beginning to brown, about 5 minutes.
  5. Add the broth, oregano and pepper flakes and bring to a boil.
  6. Stir in the chicken and hominy and simmer until heated through, 3-4 minutes.
  7. Serve with lime wedges.
