Skillet Lasagna

You Will Need

  • 1 pound lean ground beef
  • ½ teaspoon black pepper
  • 1 small onion, chopped
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) tomatoes
  • 1 cup water
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • ½ teaspoon garlic powder
  • 1 egg, beaten
  • 2 cups low-fat cottage cheese
  • 1 cup Parmesan cheese
  • 8 ounces lasagna noodles, uncooked if using no-boil lasagna. (If using regular noodles, prepare according to package directions.)
  • 1 cup shredded reduced-fat mozzarella cheese

What to do
  • Brown meat in a large skillet; drain excess fat.
  • Add onion and cook until soft.
  • Stir in tomato sauce, tomatoes, water, oregano, basil, garlic powder and black pepper. Bring to a boil, reduce heat and cook gently for 5-10 minutes. Stir occasionally.
  • Pour sauce into a large bowl.
  • In a separate bowl, combine egg, Parmesan cheese and cottage cheese.
  • In skillet, layer the meat sauce, cheese and egg mixture, and lasagna noodles (break noodles if necessary). Repeat layers. Finish with meat sauce. Cover with lid and boil gently 5-10 minutes.
  • Sprinkle lasagna with shredded cheese.
  • Cover and simmer 10-15 minutes or until noodles are tender and mixture is bubbling and hot.
  • Add a little water if mixture gets too thick.
